2021 Fume Blanc
Fume Blanc is a tribute to a wine that Robert Mondavi invented in the late 60's. Back then, Sauvignon Blanc in California was known as a sweet wine. In order to market a drier style, Mr. Mondavi needed to change the name. He chose Fume Blanc as a nod to the great Sauvignon Blancs of the Loire Valley, France known as Pouilly Fume. The soils of Pouilly Fume are said to impart a smoky quality into the wine, hence the name Fume. As with Robert Mondavi, we choose to barrel ferment our Sauvignon Blanc to give an ever so slight smoky character to balance the lovely tropical fruit. After fermentation we stirred the barrels weekly to extract richness from the yeast, which is called sur lie aging.
You will notice the bright straw color with beautiful clarity. Hints of stone fruit, guava and pineapple in the nose with a touch of dry grass. Rich flesh and yeasty density in the mid palate, with a crisp and dry finish with balanced acidity.
