2019 Cabernet Franc
This classic variety from the Umpqua Valley Oregon was inspired by the wines of the Loire Valley, France. A late ripener that requires lots of patience to achieve maturity in the vineyard. Once harvested we cold soak the crushed fruit for 3 days followed by fermentation in open top fermenters. Post pressing, the wine is aged for 24 months in 40% new French Oak.
The 2019 is dark in color with a deep garnet hue. The nose opens with aromas of black raspberry, elderberry, and a hint of white pepper. The flavors in the mouth are of full of plum and dried cherry that lead to rich firm tannins. This wine has length and the flavors linger awhile as you enjoy your meal or reflect on the day. Solid acidity makes this a very versatile food wine.
