This fruit was sourced from the eastern edge of Chehalem Mountain, above Newberg and north of The Dundee Hills. Made from clones Dijon 777 and Pommard, whole clusters are fermented in open top concrete fermenters for 14 days with punch downs, then aged in 40% new French Oak.
The nose opens with notes of blackberry, allspice and cherry, has a luxurious silky smooth mouthfeel and creamy finish. As you take your first sip it leaves you wanting more and more.
Pairing: Smoked pork ribs or pan seared duck breast.
