2014 Cabernet Franc
This classic variety from Southern Oregon was inspired by the wines of the Loire Valley, France. A late ripener that requires lots of patience to achieve maturity in the vineyard. Once harvested we cold soak the crushed fruit for 3 days followed by fermentation in open top fermenters. The wine is aged for 24 months in 40% new French Oak. This wine has a deep garnet color that invites you into the glass. You will find hints of white pepper, clove, black fruits and cocoa. We enjoy pairing with wild game such as elk or a roasted port tenderloin over lentils.
