2013 Vin Santo
Our Vin Santo follows in the Tuscan tradition of allowing whole clusters to dry on straw mats before pressing and fermenting into a highly concentrated and often sweet wine. These “straw wines” were traditionally aged for many years in small oak barrels in winery attics, where the temperature fluctuated with the season. Our version uses Umpqua Valley Chardonnay dried for 40 days on straw then fermented with native yeasts for 3 years in French oak. It is deeply caramelized, nutty and pairs perfectly with Oregon hazelnut biscotti.
