2014 Cabernet Sauvignon
Cabernet was the first wine I ever made after moving to the Napa Valley. Although this noble variety is best known as the cornerstone of many great Bordeaux blends, due to it's popularity it is now grown worldwide. This Cabernet Sauvignon is from the Rogue Valley with a touch of Merlot from the Umpqua Valley. Fermented in our Oak tanks to retain heat during fermentation in the cool days of late October. Macerated for 21days gave this big red a dense cherry core and bold tannins. Aged for 2 years in 35% new French Oak barrels.
Sweet jammy cherry fruit with cocoa powder and coffee notes. Dense Cabernet frui with rich tannins and balanced acidity. A wine that will drink well now and for years to come. Pair with prime rib or a classic steak au poivre.
